LISOPROQ egg-white enzyme inhibiting sporulated bacteria in dairy, meat, and wine.
LISOPROQ is an enzyme obtained from egg whites, used for the inhibition of sporulated bacteria including Clostridium tyrobutyricum. It is not active against yeast, moulds, and gram negative bacteria, and it does not affect the development of starter cultures.
In cheeses, LISOPROQ prevents late blowing during maturation without affecting aroma, texture, or the maturing process. In wines, it stops malolactic fermentation and helps reduce the dosage of sulphites. Proquiga disposes of liquid LISOPROQ and granular LISOPROQ.
Adds products that compete with one of LISOPROQ’s direct competitors but not with LISOPROQ itself. They are shaded, and Linked Through names the direct competitor each one competes with.
