Handary provides four epsilon-polylysine products under the Epolyly family. Epolyly is pure epsilon-polylysine from fermentation of Streptomyces albulus PD-1, and Epolyly HCl is epsilon-poly-L-lysine hydrogen chloride from controlled fermentation of Streptomyces diastatochromogenes.
Epolyly products are used to control the growth of Total Plate Count, yeasts, and selective molds. Handary lists applications in bakery, confectionery, culinary, dairy, meat, and fish and seafood.
