Natamycin (E235, CAS No. 7681-93-8) is an anti-fungal compound produced by Streptomyces fermentation. It inhibits the growth of various molds and yeasts and can reduce the production of mycotoxins. As a food preservative it is usually used in cheese, cakes, and other foods.
The minimum inhibitory concentration is usually 1 to 10mg per kg. It is applied on the food surface by spraying or soaking, is effective at pH 3 to 9, and conforms to GB25532 and JECFA. The company passed ISO9001, ISO22000, Halal, and Kosher certification.
