Natamycin extracted by controlled Streptomyces natalensis fermentation for surface mold control on foods.
Natamycin is a polyene substance extracted after controlled fermentation of Streptomyces natalensis. Its formula is C33H47NO13 and its INS number is 235. It is supplied as 95 percent content and 50 percent content grades in 100g bottles, 500g bottles, and 10kg boxes.
It strongly inhibits molds and yeasts without acting on bacteria, and works at pH 3 to 9 with surface effect from low solubility. Applications include spraying cakes and cheese and soaking meat sausage at 300mg per litre, and dosing juices and wine at 5 to 10mg per kg. Zhejiang Silver Elephant Bioengineering was the first drafting unit of the GB25532-2010 natamycin quality standard.
